Purity of Water – the Lifeblood of Baijiu
Flowing all the way the mountains of the Qinghai – Tibet plateau, the crystal – clear pure snow water flows into Luzhou´s water cycle of 76 rivers and streams. This water is then extracted from our historic Longquan Well,
providing a water that is rich in minerals, and the perfect degree of hardness that facilitates the healthy growth of enzymes that is vital to creating the highest quality Baijiu.
The cellar (or fermentation pi) is the soul of Baijiu. The older the cellar, the better the quality of the Baijiu. Luzhou Laojiao has owned 10,086 cellars (fermentation pits) with 50 years of history or above. Among them, the „1573 National Treasure Cellar Cluster”(located at Yinggoutou National Cellar Base of Sanxing Street) has been continously making Baijiu for more than 440 years since the Ming Dynasty. It is acclaimed as the nation most historical yet been continuously operating cellar throug centuries. I tis well kept and widely regarded as the nation „living cultural relic”.

Cave: Enhancing the quality of Baijiu by aging in the cave
Aging is necessary in getting in the Baijiu mature. Newly maade Baijiu could be too spicy for the palate and after aging, the spiciness is removed and replaced by smooth and mellow taste. Luzhou Laojiao owns 3 types of natural caves : Chunyang Cave, Drunken Weng Cave and Longquan Cave. Air movement within the cave is slow, temperature is consistenly at 20°C, humidity at 80% respectively. Such environment is conducive to the striving of micro – organism and liquor aging. In addition, the storage vessels are made in clay and it also facilitataes the interaction of liquor with air ( owing to the fact clay is low in material density).
